The Cookie A Day Challenge

This week I’m joining my Ambitious-Cookie-Making blogger friend Stephanie, of The Cookie A Day Challenge, in her new weekly Cookie Blog Hop.  Hopefully she doesn’t kick me off the linky list as soon as she catches wind of the baking blasphemy to follow…

I love to bake, especially with my 7 year old daughter, who is quite the measuring whiz.  And when it comes to baked goods, I usually prefer to make things from scratch.

But after 3 or 4 attempts at making Peanut Butter Blossoms (peanut butter cookie with a Hershey’s kiss in the middle), using various cookie recipes, I was discouraged that they didn’t taste as good as some I had tried.

I wanted cookie perfection.  Really, the peanut butter and chocolate combination demands it.  My search continued.

A Time and a Place for a Cookie Mix

Until, as a new blogger last year, I participated in a “Cookie Exchange” promotion by Hershey’s.  One set of fancy, pre-printed pack of recipe cards with Hershey’s creations later … and I found the Keys to the Perfect Peanut Butter Blossom Kingdom!

And the beauty of it was, they used a cookie mix.  Which means two things:

  • Super quick and easy, and
  • Consistently delicious!

So while I don’t often advocate paying extra for packaged baking kits which usually amount to inferior flavor, I was amazed at how good these were.  Better than any I had tried to make on my own.

So here it is…

Peanut Butter Blossoms Recipe

Peanut Butter Blossom Ingredients:

36 Hershey’s Kisses milk chocolates

2 Tablespoons vegetable oil

1 pouch Betty Crocker Peanut Butter Cookie Mix

1 Tablespoon water

1 Egg

Granulated Sugar

Peanut Butter Blossom Directions:

  1. Heat oven to 375.  Remove wrappers from chocolates.
  2. Stir cookie mix, oil, water, & egg in medium bowl until soft dough forms.
  3. Shape dough into 1-inch balls.  Roll in granulated sugar; place on ungreased cookie sheet.
  4. Bake 8-10 minutes or until lightly browned.  Immediately press a chocolate into the center of each cookie; cookie will crack around edges.  Remove from cookie sheet to wire rack.  Cool completely.

Makes about 3 dozen cookies.

By the way, Hershey’s has a very yummy recipe site.

Do you love cookies?!  Of course you do.  So come join us on the hop – the more the merrier!
